not to mention that merely alternating spammed characters and/or spacings allows spamming to continue.

How about just calibrating it at the beginning and look for sudden burst in speed in typing. Also check to see if there are too many mispellings(like this word). And if the person types WAY too quickly for it to be natural, then go ahead. Also watch out for grammar.

What's way too quickly?
How can someone determine that?

the plan is:
1. record the average speed of typing, then if the typing speed goes above it way too much, say 45 to 110, then it blocks the text.
2. record the average accuracy(spelling) of typing, then if the accuracy goes too far down too quickly, like 90% to 15%, then it blocks it. this would need a word list in the memory of the server about the size of the OED though.
3. Check if the speed of the typing is above a limit, say 100 WPM.
4. record the average accuracy(grammar) of typing, then if the accuracy goes too far down too quickly, like 90% to 15%, then it blocks it.
